1 / 2 cup butter, softened
1 cup sugar
1 egg
1 / 4 cup milk
1 teaspoon vanilla extract
1 3 / 4 cups all purpose flour
1 / 3 cup baking cocoa
1 / 2 teaspoon baking powder
1 / 2 teaspoon salt
16 large marshmallows up to 18

Directions
Preheat oven to 350 degrees.
In a large bowl, cream together thebutter and sugar. Add the egg, milk and vanilla; mix well.
In another bowl, combine the flour, cocoa, baking soda and salt; beat into the creamed mixture.
Drop by rounded teaspoonfuls onto prepared baking sheets. Bake for 8 minutes.
Meanwhile, cut the marshmallows in half. Press a marshmallow half (cut side
down) onto each cookie. Return cookies to the oven for 2 minutes. Let cool completely.
Cookie Icing
6 tablespoons butter, softened
2 tablespoons Baking Cocoa
1 / 4 cup milk
Sugar 1 3 / 4 cups confectioners'
1 / 2 teaspoon vanilla extract
Directions
In a small saucepan combine butter, cocoa and milk. Bring to a boil. Boil for 1 minute, stirring constantly there. Let cool, transfer them in a small bowl. Beat in the confectioners sugar and vanilla sugar until fluffy. Spread over the cooled cookies. Top each cookie with pecan half.

A lighter than air cookie with coconut and cherries.
4 eggs
1 1 / 2 cups sugar
2 / 3 cup all purpose flour
1 / 2 teaspoon baking powder
1 / 4 teaspoon salt
2 tablespoons butter, melted and cooled

5 cups coconut flakes
1 jar maraschino cherries, drained and halved
Directions
Preheat oven to 325 degrees.
Prepare baking sheets with Teflon cooking spray. The whole thing withFlour.
In a bowl beat the eggs until frothy. Gradually stir in sugar, keep hitting until thick and pale yellow.
In another bowl combine the flour, baking powder and salt, fold into the egg mixture. Stir in the butter, vanilla and coconut.
Drop by teaspoons onto prepared cookie sheets. Press a cherry in each cookie. Bake for 10 to 13 minutes. Cool.

1 / 8 teaspoon salt
3 / 4 cup sugar
3 tablespoons plus 2 teaspoons raspberry gelatin powder
1 tablespoon white wine vinegar
1 cup miniature chocolate chips
Directions
Preheat oven to 250 degrees.
Line baking sheets with parchment paper.
In a bowl, beat egg whites and salt until foamy. Combine the sugar and gelatin powder, gradually into the egg white, beatstiff and the sugar is dissolved. Beat in the vinegar. Fold in chocolate chips.
Drop by teaspoons 2 inches apart on prepared baking sheets. Bake 25 minutes. Turn off the oven, so that kisses longer in the oven for 20 minutes. Cool completely.
Makes 72 cookies.
