Recipe has you by the amazing Hungry Girl: www.hungry-girl.com Ingredients 1 serving hot chocolate light An 8-ounce tub fat-free (or 95% fat free) cream cheese, room temperature 2 Sugar Free Chocolate Pudding Snacks 1 / 3 cup Splenda No Sweetener (granulated) 2 tsp. Vanilla extract 2 cups Cool Whip Free, thawed, divided 3 tbsp. Peanut butter, room temperature Two 100-Calorie Packs Oreo Thin chips or 3 sheets (12 crackers) chocolate graham crackers Optional: Fat FreeReddi-wip Directions: Dissolve 2 tablespoons of cocoa mix. Hot water. In a medium bowl, combine chocolate mixture with cottage cheese, pudding, Splenda and vanilla sugar. With a handheld electric mixer, whisk until smooth. Fold in 1 / 2 cup Cool Whip. Transfer mixture to a large cake pan and set aside. In a medium bowl, remaining 1 1 / 2 cups of Cool Whip to combine with peanut butter. Whisk until smooth and uniform in color. Distributed over the "cake". Cover and refrigerate until chilled and slightly firm, about 2Hours. Meanwhile, crush Oreo thin crisps or chocolate graham crackers into fine crumbs and set aside. When ready to serve, top pie with crushed cookies / graham crackers. If you like, top each serving with a splash of Reddi-wip. Enjoy with a spoon! Impressive Chocolate-Amaretto Cheesecake For Diabetics and Dieters

This sugar-free, low-fat, chocolate-amaretto cheesecake is exactly what you are looking for. It is impressive in appearance and taste. Your family and friends find it hard to believe this cake fits into their diet plans.

Diabetic Chocolate-AMARETTO CHEESECAKE

6 sugar free chocolate wafers (1 1 / 2 to 2 oz)
OilSpray
1 cup Equal Sugar-Lite
1 cup 1% low-fat cottage cheese
4 oz fat-free cream cheese
8 oz 1 / 3 less fat cream cheese
6 tablespoons unsweetened cocoa powder
1 / 4 cup flour
1 / 4 cup Amaretto
1 packet of vanilla sugar
Pinch of salt
1 large egg
2 tablespoons powdered sugar-free chocolate wafers for garnish

Preheat oven to 300 degrees.

Sixth place wafers in a food processor and pulse until coarsely ground. Spray an 8-inch springform pan with cooking spray.Sprinkle crumbs over bottom of pan.

Place Equal, cottage cheese, cheese, cream, cocoa, flour, amaretto, vanilla sugar and salt in a food processor. Process ingredients until fluffy. Add eggs and process until blended. Pour batter into prepared pan. Bake at 300 degrees 55 minutes or until the cheesecake center barely moves when pan is stirred. Remove cheesecake from oven and run a thin knife around the outer edge to loosen from the pan. Sprinkle crushed wafers on topif desired, for garnish. Cool to room temperature. Cover, refrigerate and chill at least 8 hours.

Cut into 8 pieces to serve.

Note: This chocolate cheesecake is a great way to impress your guests. You will never believe that they actually eat a low-fat, sugar-free cheesecake!
